Sticky Honey Salmon with Peach Salsa
Ingredients:
2 ripe peaches, chopped into 1/2” pieces
1/2 English Cucumber, diced into 1/2” pieces
1 red bell pepper, seeded and diced into 1/2” pieces
2 tbsp cilantro, chopped
1 lime, juiced
1 tbsp honey
1/2 tsp salt
optional : 2 tbsp red onion, diced, 1/2 jalapeño, finely minced
For the Sticky Honey Glazed Salmon
1 1/2 lbs salmon, cut into 4 even filet
1 tsp salt
1 t sp chili powder
1 tsp smoked paprika
2 tbsp + 1 tbsp avocado oil, divided
4 cloves of garlic, peeled and finely chopped
1/3 cup soy sauce (or coconut aminos)
1/3 cup honey (can sub maple syrup)
1 tbsp sriracha
Directions:
Begin by combining all the ingredients for the peach salsa. Toss to coat and set in the refrigerator until ready to serve.
Pat the salmon with paper towel to dry it and season it with the salt, chili powder, smoked paprika,
Heat the avocado oil In a large skillet over medium-high heat. When the oil is hot, add the salmon, skin side down. Cook for 4-7 minutes, then flip and cook for an additional 2-3 minutes. Remove the salmon to a plate and set aside.
Reduce the heat, and to the same skillet, add the remaining avocado oil and the garlic. Sauté the garlic, watching it closely so it doesn’t burn, for 30 seconds. Quickly add in the soy sauce, honey and sriracha.
Bring the sauce to a gentle simmer, stirring often until it thickens slightly. Remove the pan from the heat. Place the salmon back into the sauce, spooning some sauce over the top of the salmon.
Serve the salmon with the peach salsa piled high on top over a bed of rice, quinoa, or pasta.

Storage
