Aspargus Tart
Here is a beautiful way to prepare asparagus that is waaayy easier than you think. I also think any momma out there would love to see this on the table for brunch/dinner.
Here is what I did:
Aspargus Tart
Ingredients:
1 sheet of puff pastry, defrosted in the fridge
1/2 a wheel of @boursin cheese
1/4 cup of pesto
1/3 cup gruyere cheese, grated
1 bunch of asparagus, trimmed
Flakey salt, @maldon
Lemon zest
1 egg, beaten
Directions:
Preheat the oven to 400. Arrange the asparagus spears on a baking sheet and drizzle with olive oil. Roast in the oven for about 5 minutes until slightly softened.
Lay out the puff pastry on a baking sheet. Score a 1/2 inch border all around the outside of the puff pastry to create a little frame for your asparagus.
Smear the Boursin on the puff pastry, then top that with the pesto and grated gruyere.
Arrange the asparagus spears (alternating directions) and sprinkle with lemon zest.
Brush the edges with egg wash and sprinkle everything with flakey salt.
Bake for about 15-20 minutes until golden brown.
Happy Friday, Friends! We made it through another week! I hope you find some time to practice some self care this weekend. It feels like it’s needed now more than ever.
