Best Broccoli Salad
This is the best broccoli salad I have ever had. 🥦. It’s seriously addicting thanks to the crisp, crunchy and fresh flavours all swimming together in there. There are sun dried tomatoes (yum), crispy radicchio, buttery pine nuts and a tangy balsamic vinaigrette that keeps you coming back for more!
This is a winner! Many thanks to a reader for sharing it with me! I love it when you send recommendations my way! This one stores very well in the fridge for leftovers. I’m putting it into rotation and adding it to my ‘winter salad’ collection!
Best Broccoli Salad
Ingredients:
2 broccoli crowns or 1 large head of broccoli cut into 1-inch pieces
1 cup orzo
½ cup oil-packed sun-dried tomatoes, rinsed, patted dry, and minced, plus 3 tablespoons packing oil
¼ cup balsamic vinegar, plus extra for seasoning
1 garlic clove, minced
1 teaspoon honey
3 tablespoons olive oil
1 head radicchio, cored and chopped fine
1 cup Parmesan cheese, grated
½ cup pine nuts, toasted
½ cup chopped fresh basil
Directions:
Bring a large pot of water to boil. Create an ice bath in another bowl. Add broccoli and 1 tablespoon salt to boiling water and cook until crisp-tender, about 2 minutes. Using slotted spoon, transfer broccoli to ice bath and let cool.
Return pot of water to boil. Add orzo and cook, stirring often, until tender. Drain orzo.
Meanwhile, whisk sun-dried tomatoes, vinegar, garlic, honey, and 1 teaspoon salt together in large bowl. Whisking constantly, drizzle in olive oil and tomato packing oil. Add orzo and radicchio and toss to combine.
Add broccoli, Parmesan, pine nuts, and basil and gently toss to combine. Season with salt, pepper, and extra vinegar to taste. Enjoy!
