Christie’s Go-To Chili
Since it’s fall, y’all, I thought it’s a good time to share with you my flawless chilli recipe. My friend recently asked me if I had a good chili recipe and I was shocked that I haven’t yet shared this with you! This one is a goodie. I’m excited for you to try it!
Chili is classic comfort food and everyone should have a recipe that they can whip up easily and quickly This version is made with mostly simple pantry ingredients and things you would have on hand. Trust me on this one: your family will love it!
This recipe came to me more than 15 years ago in a recipe exchange - do you remember when we used to have those emails with a list of names and you had to send a recipe to each name then add your name to the very bottom? And do you also remember that they NEVER worked?? Well, not never, ever. Because I somehow landed this chili recipe, and it’s SO fab!
We make this all the time. Here’s why:
When I grocery shop for the week, I always buy carrots, celery, onions and garlic. They are ALWAYS on hand.
Then, because we love this recipe, I always have in the pantry, a can of diced tomatoes and a can of chickpeas.
Lastly, we always have beer for my husband. So I can whip this together in no time and a cozy lunch is on the table with plenty of leftovers for lunchboxes. #winning!
This chili has so much flavour without a lot of ingredients. It’s got tons of veggies all diced up small, so even your pickiest eater is bound to get a few of them into their bellies!
Christie’s Go-To Child
Ingredients:
1 lb of ground beef or a mixture of beef, pork, whatever you like
1 large or 2 small onions, diced
2-3 carrots, chopped (approx 1 1/2 cups)
2-3 celery ribs, chopped (approx 1 cup)
3-4 garlic cloves, chopped (approx 2 tbsp)
2-3 tbsp cumin
3/4 of a can of beer
1 can of chickpeas
1 28oz can of diced tomatoes
salt and pepper, I love having this brand on my counter
Hot sauce, cheese, sour cream, avocado or any of your favourite chilli toppings, for serving
Directions:
Sauté the onion, carrot and celery in a little bit of butter and olive oil until soft ~ 5 mins. Season with S&P.
Add in the garlic, stir, then the beef. Break the beef up into small pieces with a wooden spoon. Season with a little more S&P.
Add in the cumin and stir.
When the beef is nearly fully brown, pour in 3/4 of the beer. Allow the beer to simmer and reduce for 10 to 20 mins.
Add in the chickpeas and the tomatoes.
Check if it needs more seasoning with S&P and give it a good dash of hot sauce, my preference is Frank’s!
Garnish with your favourite toppings, and serve!
