Bang Bang Cauliflower

Ingredients:

For the Sauce:

  • 1 cup of a sriracha mayo OR mix together 1 cup mayo, 1 tbsp sriracha sauce

  • 1/2 tsp honey

  • 1 tsp rice vinegar

  • 2 heads Cauliflower

  • 1.5 cups all-purpose flour (can sub #glutenfree)

  • 1 1/2 cups All purpose flour

  • 2 tablespoon corn starch

  • 2 teaspoon Garlic powder

  • 2 tsp onion powder

  • Salt & Pepper to taste

  • 2 cups Buttermilk

  • 1 cup Panko breadcrumbs

  • Spring onion greens for garnishing

  • Toasted sesame seeds for garnishing

    Directions:

  1. To make the sauce, add sauce ingredients in a bowl. Whisk it until smooth. Set it aside.

  2. Next, make the batter, by whisking the flour, cornstarch, onion powder, garlic powder, salt and pepper in a bowl.  Then add the buttermilk and try to mix until it’s a smooth, thick batter.

  3. Keep 3 bowls (for the batter, panko bread crumbs, cauliflower florets), a plate (to keep breaded florets) and 2 forks (one for batter and one for breadcrumbs) ready.

  4. Now dip one floret into the batter and drain excess batter by lifting it using a fork and place on a plate or directly into the air-fryer basket.

  5. Repeat the same until it fits into the basket in a single layer. Spray it with cooking oil spray. You may have to do it in batches.

  6. Air fry them at 400°F for 15 minutes. The florets should be golden brown and crispy around the edges, but soft from the inside.

    Baking instructions:

Preheat the oven to 425°F. Arrange the breaded florets on a parchment-lined baking tray in a single layer. Bake for 20 minutes, flip and bake another 5 minutes.

Drizzle the bang bang sauce on top. Toss it until the florets are coated with the sauce.

Serve immediately on a plate, garnish with chopped green onions and toasted sesame seeds.
