Napoleon, Neapolitano, Neapolitan Cookies (Call them what you like)

An odd take on a classic flavour combo

If you follow me on instagram you may have seen my ridiculous story the other night when I tried to announce that I had a sweet tooth, and was making these cookies …but I called them the wrong thing, not just once, but THRICE! I have to laugh…clearly putting yourself out there on the interwebs when you are a little knackered is not a great idea!

But I persevered and whipped up these little beauties in hopes that they would bring a little Valentines joy to the house. The food colouring that I used turned them a lovely violet shade - not the hot pink I was expecting, but not matter….the cookies are delicious and have been thoroughly enjoyed.

If you are looking for a little baking project these cooking are lovely. I adapted this recipe from Sarah Kieffer’s book ‘100 Cookies’. I hope you love them.


Neapolitan Cookies

Ingredients:

  • 1 1/2 cups + 1 tbsp all purpose flour

  • 3/4 tsp baking soda

  • 3/4 tsp salt

  • 1 cup butter, at room temp (I used salted. The original recipe called for unsalted)

  • 1 3/4 cups granulated sugar

  • 1 large egg + 1 egg yolk

  • 2 tsp vanilla extract

  • 5-7 drops red food colouring

  • 2 tbsp dutch processed cocoa powder

  • sanding sugar for decoration (optional)

    Directions:

  1. Preheat the oven to 350F. Line 2 sheet pans with parchment paper or silicone liners.

  2. Combine the flour, salt and baking powder.

  3. In the bowl of a stand mixer, or a large bowl, beat the butter until creamy. About 1 minute. Add the sugar and continue to beat until light and fluffy. 2-3 more minutes. Add in the egg + egg yolk and beat until combined. Add in the vanilla.

  4. On low speed, combine the flour mixture into the butter mixture until just combined.

  5. Dump the dough out onto a work surface and divide into 3 equal portions. Add the food colouring to one section and the cocoa powder to another.

  6. Take a small pinch of each flavour of dough and press them together. Rolling gently into a ball. Roll in the sanding sugar and place on the cookie sheet. Repeat with the remainder of the dough.

  7. Bake for 10-12 minutes. Transfer to a wire rack to cool.
