Buffalo Chicken dip appetizer is the BEST when hosting a crowd

Buffalo Chicken Dip is my go-to crowd pleasing game day appetizer.

I have to thank Taylor Swift for making me all-of-a-sudden aware, and somewhat interested, in the Super Bowl this year! Of course, I’m rooting for her boyfriend’s team!

But the reality is, is that game days aren’t new around here. Fraser is a diehard Miami Dolphins fan and has been since the day we met. His dad like the team in Buffalo - I have no idea what they call themselves, but I know that when the two of them get together to watch the game, there’s a lot of shouting at the TV and someone is always disappointed. Football is so weird.

Anyways, Super Bowl Sunday is around the corner so I’m sharing my favourite Buffalo Chicken dip. Fraser always swoons when I tell him I’m making this Buffalo Chicken Dip. Give it a try for your game day celebration. It will be devoured.


Buffalo Chicken Dip

Ingredients:

  • 1 tablespoon unsalted butter

  • 2 teaspoons minced garlic

  • 2 cups cooked chicken, shredded

  • 1/2 cup Frank's Original Red Hot Sauce

  • 8 oz (250g) g block cream cheese, softened

  • 1/2 cup ranch dressing

  • 1/2 cup white Cheddar cheese freshly shredded

  • 1/4 cup old cheddar cheese, shredded

  • 1/4 cup crumbled blue cheese (optional, to serve)

  • 2 teaspoons green onions, sliced ( or chives)

Directions:

  1. Preheat oven to 375F. Arrange oven rack to the middle of your oven.

  2. Ideally, use an 8-inch cast-iron skillet and melt the butter over medium-high heat. If you do not have one (I don’t and just used a regular fry pan). Sauté garlic until fragrant (30 seconds). Add the chicken and hot sauce and simmer until sauce has thickened and reduced by half (about 2 minutes).

  3. Reduce heat to low and stir in cream cheese; mix until melted and combined. Take off heat, stir through ranch sauce and 1/2 of the cheddar cheese. Sprinkle top with remaining cheese.

  4. Bake until bubbling around the edges and the cheese has melted (about 10 minutes). Turn on the broiler for a further minute (or two - MAX) to brown on top. Keep an eye on this!

  5. Immediately garnish with blue cheese (if using) and green onions. Serve with vegetable sticks, chips, crusty bread pieces for dipping.
