Spicy Tortellini Soup

Spicy Tortellini Soup is a perfect winter lunch or dinner.

If you are in the mood for winter comfort food, look no further! The spicy Italian sausage is simmered together with so many veggies and then blitzed into a rich, tomato broth. The addition of kale and a generous sprinkling of parmesan makes this soup perfect lunch, dinner or snack!

I named this warming, comforting soup Spicy Tortellini Soup because I used hot Italian sausage links in it, but truthfully, I’m a bit of a wimp when it comes to the heat and this soup was JUST right! Not overly spicy at all.

The combination of spicy sausage, cheesy tortellini and a rich tomato base is the best combination for chilly winter days. Your family will fall in love with this hearty soup.


Spicy Tortellini Soup

Ingredients:

  • 1 package of premade cheese tortellini

  • 1/2 lb of hot Italian sausage, casings removed

  • 3 carrots, chopped

  • 3 celery stalks, chopped

  • 1 yellow onion, chopped

  • 1 red bell pepper, chopped

  • 5 cloves of garlic, chopped

  • 3 tbsp tomato paste

  • 5 sprigs of thyme

  • 6 cups chicken broth

  • 1 14 oz can crushed tomatoes

  • 1/2 bunch kale or spinach, roughly chopped

  • parmesan cheese for serving

    Directions:

  1. Heat the olive oil over med-high heat in a large pot. Add the sausage meat and stir to break up and cook through. Allow the meat to sit 2-3 mins at a time to get caramelized. Remove to a separate plate once cooked, and set aside.

  2. Add all the veggies (except the kale/spinach) with a big pinch of salt, and cook for 5 mins. Then add in garlic, thyme and tomato paste. Stir until the tomato paste darkens a little.

  3. Add the chicken stock and crushed tomatoes. Bring to a boil, then reduce the heat to a simmer for 20 mins.

  4. Turn of the heat and use an immersion blender or your blender to whiz the soup until smooth. Return the soup to the heat and add in the tortellini.

  5. When the tortellini is almost finished (follow package directions and taste to be sure), add in the kale/spinach. Top with freshly grated parmesan and enjoy!
