Hello and happy Sunday to you!

We are officially into the last week of school, exams, volleyball tryouts, soccer practices, birthday celebrations and getting our house ready for our renters. It’s a pressure cooker over here 😅. But it will all get done, it always does, in some way or another. If I am a little less active on Instagram next week, you will know why. But I am never not thinking about you, my dear subscriber, and wanting to bring you as much support as I possibly can. Because I’m also always thinking about what to eat next, so you don’t have to.

This week, I posted my Summer Soirée Dinner Party Menus for FREE because I’m so passionate about us all gathering outdoors and making the best of the summer months (my FAVE time of year!). I’m working on a grilling menu and would be oh-so-happy to take requests!

What caught my eye this week

LISTENING The Pressure Cooker podcast recently aired an episode on Ultra Processed Foods (UPF). While I don’t want to add to anyone’s stress or guilt about feeding their kids, I believe in the importance of eating foods in their most natural state. I try to live by the mantra, "If it comes out of the ground or lived on the ground, then it’s fine to eat." The podcast discussed how the food industry influences our diet choices and the impact this has on our health. Then, as the universe has a way of doing, it sent me this article too, in case you wanted to do a deep dive on the subject ;-)

BOUGHT this WEEK I ordered these new jeans. They are FLEECE on the inside! They are actually sweatpants disguised as designer jeans! They arrive on Wednesday. I will make sure to share them in my stories! And not new this week but I’m still infatuated with my new hairdryer (If you missed it, I got THIS one. And it’s AMAZING! If you are in 🇨🇦 use this link.) I had no idea a good hairdryer could make such a difference in how my hair looks and how much time it saves me!

WATCHING Life is short. If you have a few minutes, this YouTube video made me teary.

DRINKING less! I want t o drink less! Does anyone have a good mocktail ideas?

READING I finished reading Any Man, by Amber Tamblyn yesterday. It was chilling. A raw look at rape when men are the victims. The format was interesting - told in tweets, interviews and stream of consciousness dialogue. Not the lightest book I’ve ever read but I was intrigued!

EATING Breakfast for dinner! The best part about this Starbucks Copycat frittata that I made for a quick dinner this week, was that the leftovers made for a delicious breakfast the next day! (newsletter exclusive recipe!)

easy frittata recipe for a high protein dinner or breakfast
INGREDIENTS: 

8 to 10 slices prosciutto or bacon, chopped

  • 5-ounce of grated Gruyère cheese

  • 10 large eggs

  • 1/2 cup cottage cheese

  • Kosher salt

  • 1 teaspoon garlic powder, divided

  • Couple shakes of hot sauce

Preheat the oven to 300F.

Cook the prosciutto (or bacon) in a skillet until crispy. Remove and set aside on a paper towel lined plate.

Into a blender, add the eggs, gruyère cheese, cottage cheese, garlic powder, salt, and the hot sauce. Blend until smooth ~ 10-20 seconds.

Grease a pie dish or if your skillet from the bacon is oven-proof, just use that. Pour in the egg mixture, top with the bacon/prosciutto and bake for 30 mins or until there is no more jiggle on top.
