Baked Feta Pasta

This is probably the easiest and tastiest recipe for pasta! The whole thing can be made in under an hour, and you barely need to pay attention to it at all! Just simpy fill a baking dish with Feta, olive oil, salt & pepper and bake.  Toss with fresh garlic, basil, then cooked pasta and you’ve got dinner handled!

Baked Feta Pasta

Ingredients:

  • 1 lb of pasta (i used rigatoni)

  • ½ cup olive oil (be generous)

  • 2 pints of cherry tomatoes

  • 1 block of feta cheese

  • 2-3 garlic cloves, minced

  • 1 handful to basil leaves, roughly chopped

  • Salt & Pepper

Directions:

  1. Preheat the oven to 400F

  2. Toss the tomatoes into a roasting dish. Nestle the feta cheese in the middle and toss with olive oil and S&P. Bake for 30mins

  3. Meanwhile, boil your pasta according to package directions.

  4. After the 30 mins, increase the heat in the oven to 450F. Add the garlic and basil. Cook for another 5-10 mins.  

  5. Remove from the oven, toss with the drained pasta and stir. Season with S&P to taste (only if needed)
