Blackberry Cheesecake Bars

Rich and creamy Blackberry Cheesecake Bars! They are a combination of simple cheesecake with a homemade blackberry sauce and a buttery graham cracker crust. So so so yummy and perfect for summer.

Blackberry Cheesecake Bars

Ingredients:

For the crust:

  • 12 sheets of graham crackers, pulsed until a crumb forms in a food processor

  • 1/4 cup granulated sugar

  • 6 tbsp melted butter

For the blackberry puree:

  • 1 pint of blackberries

  • 1/4 cup of granulated sugar

  • 1/4 cup water

For the cheesecake:

  • 2 blocks of cream cheese, room temp

  • 1/2 cup sour cream 

  • 2 large eggs 

  • 1/2 cup granulated sugar

  • 1 tbsp lemon zest

  • 1/2 cup fresh lemon juice

  • 1/4 tsp salt

Directions:

  1. Preheat the oven to 350 degrees. Butter a 9 x 9 pan. Using a food processor, pulse the cookies until they are completely broken down into a fine crumb and add the sugar and melted butter. Pulse a few more times until the mixture looks like wet sand. Dump into the pan and press firmly into the bottom of the pan. Bake for 8-10 mins until a nice golden colour. Remove to cool. Lower the oven temperature to 325 degrees. 

  2. In a small saucepan on medium low heat, mix together the blackberries, sugar and water. Cook for 8-10 mins until the blackberries are completely broken down. Strain the berries, reserving the liquid. Dispose of the solids. Let cool.

  3. Using your stand mixer or a hand mixer, cream together the cream cheese, sugar and lemon zest until light and airy (about 3 mins). Then add the sour cream and eggs, one at a time. Finally, add the lemon juice and salt. Scoop everything onto the prepared crust. Smooth out the top with a spatula and drizzle the blackberry puree on top. With a toothpick, skewer or chopstick, make a swirling pattern. 

  4. Place the 9 x 9 pan into a larger pan and fill the larger pan 1/2 way with hot water from your kettle. Bake for an hour and fifteen minutes or until the middle no longer jiggles. Remove from the oven and let the pan cool completely before cutting into squares. Enjoy!
