Greek Tuna Salad
This is such an easy and satisfying lunch idea. It’s low carb, full of veggies and protein and a great no mayo tuna salad alternative.
Greek Tuna Salad
Ingredients:
1 jar of tuna in oil @riomareglobal
Cherry tomatoes, halved
Spring onions or red onion, sliced
1 orange bell pepper, diced
2 baby cucumbers, diced
Base of lettuce, I used Romaine
Marinated artichokes, sliced smaller
2 tbsp capers
2 tbsp red wine vinegar
1 tbsp dijon mustard
Chopped parsley, optional
Directions:
Drain the tuna, reserving the oil. In a bowl, break tuna in the chunks.
Add in tomatoes, cucumber, bell pepper, artichokes, and capers.
Mix together the tuna oil, vinegar and dijon mustard. Season to taste with S&P.
Toss the salad together and top with chopped parsley if desired!
