Greek Tuna Salad

This is such an easy and satisfying lunch idea. It’s low carb, full of veggies and protein and a great no mayo tuna salad alternative.

Greek Tuna Salad

Ingredients:

  • 1 jar of tuna in oil @riomareglobal

  • Cherry tomatoes, halved

  • Spring onions or red onion, sliced

  • 1 orange bell pepper, diced

  • 2 baby cucumbers, diced

  • Base of lettuce, I used Romaine

  • Marinated artichokes, sliced smaller

  • 2 tbsp capers

  • 2 tbsp red wine vinegar

  • 1 tbsp dijon mustard

  • Chopped parsley, optional

Directions:

  1. Drain the tuna, reserving the oil. In a bowl, break tuna in the chunks.

  2. Add in tomatoes, cucumber, bell pepper, artichokes, and capers.

  3. Mix together the tuna oil, vinegar and dijon mustard. Season to taste with S&P.

  4. Toss the salad together and top with chopped parsley if desired!
