Cheesy Stuffed Shells
These little shells are stuffed with 3 types of cheese, then smothered in a rich and delicious marinara sauce and topped with even more cheese before being baked to perfection. It’s a comfort food classic and perfect to start your week out right! .
Bonus: the leftovers are scrumptious packed for lunch the next day!

Cheesy Stuffed Shells
Ingredients:
1 small onion, diced
1 cup of chopped pancetta or thick cut bacon
1 pkg of jumbo pasta shells, cooked to package directions
1/2 a large container ricotta cheese
3 cups shredded mozzarella cheese
2 tsp dried oregano + 2 tsp dried basil
S&P
1 egg
1/2 cup grated parmesan cheese
1 container of marinara sauce (I like @raos)
Chopped parsley for garnish
Directions:
Preheat the oven to 375F. Coat a 9 x 13 baking pan with cooking spray
Heat a medium sized pan on medium high heat. Cook the onions for 3-5 minutes until they start to soften. Add in the pancetta and fry until crispy. Remove from heat.
Meanwhile, spread half the marinara sauce in an even layer in the bottom of the pan. Set aside.
Place the ricotta cheese, 1/2 of the mozzarella cheese, the seasoning, egg, S&P and parmesan cheese into a bowl. Stir to combine. Add in the onion mixture.
Fill each shell with the ricotta mixture and place in the baking dish.
Spoon the remaining marinara sauce over the shells and then sprinkle with the remaining mozzarella cheese.
Cover with foil and bake for 20 mins. Uncover the pan, and bake an additional 10 minutes or until the cheese is melted and starting to brown.
Sprinkle with parsley and serve!
