Classic Molasses Spice Cookies
Oh hey there, December! I’m so happy to see you. I mean, I’ve got a little anxiety about you being here, and all, but I like all that you bring when you come. Like cookies.
I can’t wait to share all the recipes I’ve been baking. Especially our family classics that, if not made, just don’t make the holiday season feel complete.
Starting with these Molasses Spice Cookies. They are perfect! Chewy, spiced, and everything nice. I would choose these any day over chocolate (I know, I’m the minority over here!)
Classic Molasses Spice Cookies
Ingredients:
3/4 cup shortening (don’t use butter)
1 cup granulated sugar
1 egg
1/4 cup molasses
2 cups flour
2 tsp baking soda
1/4 tsp salt
2 tsp ginger
1 tbsp cinnamon
1 tsp cloves
Directions:
Cream together the shortening and the sugar until well combined and light. Then add the egg. Followed by the molasses.
Add in the dry ingredients and blend together.
Chill the dough for at least 2 hours (and up to 2 days).
Shape dough into ping pong ball size and roll in granulated sugar
Place on parchment lined cookie sheets. Bake at 350F for 8-10 mins (I drop my cookie sheet on the counter immediately after baking to give the cookies more crinkle)
