Antipasto Quinoa Salad
It’s mid-week and I want you to finish the week off strong! This antipasto quinoa salad is so full of Mediterranean goodness that will keep you feeling fueled and fabulous, even on the busiest days.
It takes just minutes to whip together and you’ll be so happy to have this in the fridge to munch on all week long! Let’s make your week a little easier, one bite at a time.
Antipasto Quinoa Salad
Ingredients:
1 cup cooked quinoa
1 cucumber diced
1/4 cup red onion diced
1 small orange bell pepper diced
1/2 cup halved cherry tomatoes
10-15 green olives sliced
1 cup chickpeas
1/2 cup crumbled feta cheeseParmesan cheese for serving
For the vinaigrette:
1/2 cup olive oil
1 tbsp Dijon
1/4 cup red wine vinegar1-2 garlic cloves, minced
1 tsp italian seasoning
1 tsp salt
1/2 tsp pepper
Directions:
Cook the quinoa according to the package directions. Place quinoa in a large bowl and add in chickpeas, cucumber, tomatoes, red onion, bell pepper, salami, olives and feta cheese.
Pour dressing over and toss together. Right before serving I added freshly grated Parmesan cheese and a little more salt and pepper.
