Simple, quick and delicious…it’s what we all want on busy weeknights, and this recipe is all of those things!

Our whole family loves this meal - and there is so much to love! The recipe is comforting, it’s filling, and it has some sneaky veggies in there.

These are also portable for those busy nights when you are flying out the door. Who doesn’t love food they can eat with their hands?

Easy 20 Minute Beef Quesadillas

Ingredients:

  • 1/2 cup onion, finely diced

    1 tbsp garlic, minced

    1 red pepper, finely diced

    1 lb ground beef

    1 tbsp paprika

    2 tsp cumin

    2 tsp oregano

    2 tsp salt

    1 tsp black pepper 

    3 tbsp tomato paste

    1/4-1/2 cup water

    For Serving:

  • Shredded mozzarella cheese

  • Tomato salsa

For the Avocado Lime Dip:

  • 1 avocado

    1/3 cup plain yogurt or sour cream

    1/3 cup cilantro

    1/2 tsp garlic, minced

    Juice of 1 lime

    1 tsp salt

    1/2 tsp black pepper

Directions:

  1. Heat some olive oil in a large skillet over medium-high heat.   Add the onion and garlic and cook for 2 minutes.   Add the beef.  Cook the beef for 3-5 minutes, breaking it up until browned.  

  2. Add the red pepper and continue to cook for 3 minutes.   Add the remaining ingredients and continue to cook until most of the water has evaporated. 

  3. Allow the meat to cool slightly before assembling your tortilla.  

  4. To make the avocado lime dip, combine all ingredients in a blender and process until smooth. 

  5. Serve with lots of cheese, a tomato salsa and the avocado lime dip! Enjoy!
