As I type this, it’s pouring rain. A perfect summer rainstorm that has up snuggled up on a Saturday afternoon. And this isn’t just any banana cake. It’s a cake that’s made for those cozy weekends at home when you have a little extra time to treat yourself.

If you’re like me, weekends are a time to slow down, enjoy the process of baking, and savour the results. This Banana Snack Cake is ideal for that. The ingredients are simple, the steps are straightforward, and the payoff is a cake that’s both satisfying and easy to make. Plus, the aroma of bananas and coffee filling your kitchen is nothing short of heavenly.

A Note on the Frosting

Let’s talk about this frosting. If you’ve never tried coffee cream cheese frosting before, you’re in for a treat. It’s velvety smooth, with just the right amount of tang from the cream cheese and a deep, satisfying coffee flavor that pairs perfectly with the banana cake. It’s the kind of frosting you’ll want to use on everything—though I promise it’s especially magical on this cake.

Be sure that your cake is entirely cooled (even cold!) before frosting your cake. I’ve made the mistake of frosting my cake too soon (damn you ADHD!) and I can assure you- having your icing liquify and slide down your beautiful snack cake is not what we’re going for here.

What you’ll need:

Mixing Bowls | Spatula | Hand Mixer | Baking Dish | Measuring Cups | Measuring Spoons | Offset Spatula (optional but great to have)

Banana Snack Cake with Coffee Cream Cheese Frosting

Ingredients:

  • 2 cups all purpose flour

  • 1 teaspoon baking soda

  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter (softened)

  • 3/4 cup white granulated sugar

  • ¾ cup loosely packed brown sugar

  • 2 large eggs

  • 1 tablespoon vanilla extract

  • 3 large bananas, mashed

  • ½ cup sour cream

Coffee Cream Cheese Frosting

  • 1 block of cream cheese (softened)

  • 1/2 cup butter (softened)

  • 2 cups powdered sugar

  • 1 tsp espresso powder

  • 1 tsp pure vanilla extract

Directions:

  1. Preheat your oven to 350F and grease a 9 x 13 baking dish. Set aside.

  2. In a medium bowl, combine the 2 cups all-purpose flour, 1 tsp baking soda, 2 tsp ground cinnamon, and 1/2 tsp salt. Mix to combine and set aside.

  3. In a larger bowl, cream together the 1/2 cup softened butter and both sugars. Beat these together until light and fluffy - about 3-5 mins. Add I the 2 eggs, one at a time, mixing well after each addition. Beat in the 3 mashed bananas and the 1 tsp vanilla until well combine. Then add in the 1/2 cup sour cream.

  4. Stir in the dry ingredients, mixing my hand or on low speed, until just combined. Don’t over mix.

  5. Transfer to your baking dish and bake for 30 mins or until a toothpick inserted into the centre of the cake comes out clean.

    Coffee Cream Cheese Frosting

  6. Mix the block of cream cheese and 1/2 cup of butter with an electric mixer until creamed. Beat in the sugar and the espresso powder. Add in the vanilla.

  7. Wait until your cake is completely cool before frosting.

Leave your cake on the counter and watch as everyone helps themselves to a little slice, all weekend long!
