Blueberry Cinnamon Breakfast Bake

If you’d like to receive oohs and ahhhh this holiday, this Cinnamon Blueberry Breakfast Bake is a must make! It’s such a quick and simple breakfast bake that your whole family will love.

It takes about 30 minutes, and most of that time is hands-off time while it bakes. It’s not super sweet but tastes like a dream thanks to store bought cinnamon rolls and fresh blueberries. Yum! Not only is this an easy breakfast recipe and absolutely scrumptious, it makes the whole house smell amazing while it’s baking!

You go ahead and enjoy your mimosa on Christmas morning. I’ve got you with this no-fuss Blueberry Cinnamon Roll Breakfast bake that your family and friends will inhale.

Blueberry Cinnamon Breakfast Bake

Ingredients:

  • 1 tube of Pillsbury Cinnamon Rolls (I like the large Cinnabon ones – comes with 5!)

  • 1/2 stick of butter

  • 2 tsp cinnamon, divided

  • 1 tsp vanilla extract

  • 3 eggs

  • 1 cup fresh blueberries

  • 1/2 cup whole milk, divided

  • 1/2 cup powdered sugar

  • 1 tbsp maple syrup

Directions:

  1. Preheat the oven to 375°F. Separate packaged cinnamon rolls and cut each roll into 6 pieces. Melt 1/2 stick of butter and mix with 1 tsp cinnamon to coat bottom of your baking dish (I used a 2.5L dish). Place the cinnamon roll pieces into the baking dish.

  2. In a separate bowl whisk together 3 eggs, 1 tsp cinnamon, 1 tsp vanilla extract and about 1/4 cup of milk. Pour this over cinnamon roll pieces. Make sure all the pieces are coated.

  3. Top with blueberries and bake for 25 minutes until browned on top.

  4. While baking, whisk together the remainder of the milk and powdered sugar in a bowl to create glaze. Add 1 tbsp maple syrup. Add more milk until you get the desired consistency. We also added the frosting that comes with the cinnamon rolls for extra thickness! Once the casserole is done, spoon the glaze on top of the casserole and serve!


    Note: this recipe serves 4. It can easily be doubled for more people. Let’s get cooking!
