Chicken Chow Mein
This Chicken Chow Mein is a little spin off of our regular summertime programming. These fresh, umami flavours are sure to please.
This brings back memories of Friday night Chinese takeout….without all the MSG
Chicken Chow Mein
Ingredients:
250 grams chow mein
3 chicken breasts cubed
2 tbsp olive oil
1 cup celery chopped
1/2 cup carrots shredded
3 cups cabbage
1/2 cup green onions chopped
SAUCE:
2 tbsp olive oil
1 tsp sesame oil
3 garlic cloves chopped fine
1 inch ginger root chopped fine
5 tbsp low sodium soy sauce
1 tbsp oyster sauce
2 tsp spicy chilli oil
1 tsp brown sugar
1 tsp cornstarch + 1 tsp water, mixed
Directions:
Begin by cubing your chicken into bite sized pieces, gently season with salt and pepper then set aside.
Bring a medium size pot of water to a boil and add your chow mein noodles while you prepare everything else.
To a large pan, add 1 tbsp of olive oil and once hot, add your chicken and cook on medium/high heat until just cooked. About 5 minutes.
While your chicken is cooking, prepare you sauce by adding all ingredients to a small bowl, whisking until everything is combined well.
Remove your chicken from the pan, and another tbsp of olive oil and once hot add your vegetables. Saute for 2-3 minutes, just until they begin to soften.
Return your chicken back to the pan, along with your cooked chow mein and reduce heat to low/simmer.
Pour your sauce over everything, stirring to combine. Once the sauce begins to thicken slightly and everything is incorporated well, you are ready to dig in.
Dish up and top with green onions.
