Chocolate Chip Energy Bites

Ingredients:

  • 2/3 cup of gluten-free quick oats, blizted in the blender for a few seconds (coconut flour works great here too)

  • 1/2 cup nut butter of your choice

  • 1 scoop of vanilla protein powder

  • 3 heaping tbsp flax powder

  • 1 tsp vanilla extract

  • 3 heaping tbsp honey

  • 1/4 tsp cinnamon

  • 2-4 tbsp vanilla almond milk

  • Pinch of salt

  • 3 handfuls of semi-sweet chocolate chips

Directions:

  1. In a large bowl, add the nut butter, protein powder, oat flour, honey, vanilla extract, cinnamon, flax and 2 tbsp almond milk and a pinch of salt. Stir until the mixture forms a dough that is soft enough to roll into balls, but not overly sticky. Adjust with more flour or almond milk if necessary to get the right consistency. Stir in the chocolate chips

  2. Roll into balls and store in the fridge.

These will keep for a week, but probably won’t last that long.

If you make insanely delicious energy bites and your kids rave and awe over what an amazing parent you are and how they’d be lost without you….please tell us all about it in the comments below. If they didn’t….well, that’s ok. We don’t need to know. Love you, bye!
