Chocolate Peanut Butter Oat Energy Balls

We are in the final stretch of the school year and everyone….I mean everyone, is burnt out. It’s all I can do to hold us all together. I need snacks on hand that are nutritious, but still tasty. Something that I can grab as we’re running out the door in the morning or to the gym. That’s where these Chocolate Peanut Butter Oat Energy Balls have saved me.

What makes these energy balls so great?

You’ll be thrilled to know that these delicious energy balls are made with such healthy ingredients! They are filled with healthy fat, protein and so high in fibre. They are also naturally gluten-free if you can get your hands on gluten-free oats. I am always on the hunt for easy snack ideas that we can have around and these are not to be missed!

What Ingredients to I need?

Just 7 simple things that you can keep on hand at all times in your pantry! PS: do you have my super helpful Pantry Staples Checklist yet? Here’s what you need:

-Medjool Dates

-Peanut Butter

-Maple syrup

-Rolled Oats

-Flaxseed

-Chia Seeds

-Dark chocolate chips

Why you’ll love these energy balls

  • You probably have most of these ingredients on hand.

  • There is no refined sugar.

  • These are made all in one bowl = easy, peasy clean up.

  • These taste like cookies but are filled with fibre and protein to keep you going all morning. #healthysnackidea!

  • These are so easy to grab and go! The perfect little energy ball for breakfast, pre-workout or on a road trip.

Chocolate Peanut Butter Oat Energy Balls

Ingredients:

  • 12 Medjool Dates, pitted

  • 3/4 cup natural peanut butter

  • 3/4 cup old-fashioned oats

  • 2 tbsp maple syrup

  • 1/4 cup flaxseed meal

  • 1 tbsp chia seeds

  • 1/4 cup chocolate chips

  • Optional Chocolate Drizzle: 1/4 cup chocolate chips + 1 tsp coconut oil

Directions:

  1. Into the bowl of a food process, add the dates and whiz them until they start to clump up.

  2. To the mushed up oats, add in the peanut butter, oats, maple syrup, flax, chia and whiz again until just combined.

  3. Add in 1/4 cup of the chocolate chips and pulse to combine.

  4. Scoop up a portion of the mixture and using your hands, roll it into a ping pong sized ball.

  5. For the chocolate drizzle: in a microwavable bowl, melt the remaining chocolate chips with the coconut oil for 30 seconds. Stir and heat again for another 30 seconds if not fully melted. Drizzle over the balls.

  6. Enjoy!

 

You can store these delicious Chocolate Peanut Butter Oat Energy Bars in an airtight container in the fridge for up to 10 days or freeze them!
