Date and Walnut Energy Bites

These are a grown up version of energy bites with hints of spices such as cinnamon, cloves and cardamom.  You will want to have these part of your meal prep!

The perfect pick me up snack!

I don’t mean to be exclusive of other snacks, but I’m going to go out on a limb here and say that these Date and Walnut energy bites are truly the most perfect snack.

I know that energy balls (energy bites?) are not new in the snacking world, but these ones are made for you. Not for the kids? Nope.

Just.

For.

You.

They are an elevated version of the ones we make for the kids. Just you wait. You’re going to love them!

Sometimes, despite best efforts, eating ‘real’ food all week long is exhausting….if not… impossible. Try as we might to eat whole foods, things that grow from the ground, full of fiber, nutrients, vitamins, provide all the macros..don’t forget the micros….I mean….It’s just not humanly possible without a private chef!

Sometimes, you just need something quick and easy to throw in your purse (or directly into your mouth) as you are running out the door to pick up, work, workout or whatever…. a snack that will keep you going for the next stretch of your day. That is where these delicious AND filling AND wholesome Walnut and Date Energy Bites come in.

I promise these will only take a moment to whiz together. You won’t regret the effort!

These are fine, you say, but where is the chocolate?

Try these 5-Ingredient Salted Chocolate Fudge Balls that are gluten-free and dairy-free. These are decadent AND good for you!


Date and Walnut Energy Bites

Ingredients:

  • 1 1/2 cups pitted dates

  • 1 cup raw walnuts

  • 1/2 cup rolled oats

  • 1/4 cup flax and chia seeds

  • 2 tbsp maple syrup (or honey)

  • 1/2 tsp cinnamon

  • 1/4 tsp cloves

  • 1/4 tsp cardamom

  • 1/2 tsp salt

  • 1/2 cup desiccated coconut (optional, for rolling)

    Directions:

  1. Add all ingredients into a small food processor. Pulse to combine until the mixture starts to come together. This might take a few minutes.

  2. Use your hands to roll the mixture into golf ball sized balls.

  3. Roll into desiccated coconut. (optional)

  4. Hide these in an airtight container in the back of the fridge so no one knows they are there. These are for you ONLY. Enjoy.
