Greek Inspired Chicken Skewers
Summer is all about enjoying the simple pleasures in life: sunshine, being outdoors and of course, delicious, seasonal food! Introducing the most flavourful Greek Inspired Chicken Skewers that will soon be your go-to summer meal!
Marinating your chicken thighs in the most a simple combination of red wine vinegar, lemon and olive oil, a little garlic, and herbs creates tender and mouthwatering chicken. Add in some sweet and juicy veggies that are grilled to perfection and you are set! Serve this up on a platter with some crumbled feta cheese, tzatziki and grilled pita and you’re transported to the Med!

These Greek Inspired Chicken Skewers are bursting with flavour and are incredibly easy to make. The combination of juicy chicken, fresh herbs, and tangy Greek marinade creates a dish that is both light and satisfying. Plus, grilling the skewers adds a smoky depth that truly elevates this meal.
I love to serve this dish family-style: smearing the tzatziki onto a platter before piling it high with rice, simple vegetables like slices of cucumber, cherry tomatoes and bell peppers, before topping with the Chicken Skewers, a sprinkling of feta and more fresh herbs.
Let your chicken thighs swim in this gorgeous marinade for a bit - a few hours is great. Overnight is even better!
TIP:
For meal prepping, mix the marinade and the chicken in a ziplock bag and freeze it immediately. The chicken will marinate while it defrosts in the fridge!
Greek Inspired Chicken Skewers
Ingredients:
1.5 lb chicken thighs, cut into cubes
2 zucchini
1 pint cherry tomatoes
2 tsp olive oil
S&P
For the marinade:
2 tbsp olive oil
juice of 1 lemon
2 tbsp red wine vinegar
3 garlic cloves, minced
1 tbsp dried oregano
2 tsp dried basil
1 tsp onion powder
1/2 tsp ground cumin
1 tsp dried dill
1/4 tsp salt
Freshly ground pepper
Toppings
Tzatziki
Feta Cheese
Kalamata olives
Fresh oregano or dill for garnish (optional)
Directions:
Marinate the chicken: In a medium bowl or zip top bag, combine the marinade ingredients and add in the cubed chicken. Massage to combine and set in the fridge for at least an hour but overnight is even better.
Using a vegetable peeler or a mandolin, slice the zucchini into long ribbons.
Preheat the grill to medium high and while it heats, assemble your skewers : thread the chicken and zucchini and tomatoes in alternating patterns onto your skewers.
Grill your skewers for 5-7 minutes, rotate and grill until cooked through (the internal temp should be at 165F if you have a meat thermometer. I highly recommend getting one!)
Allow the chicken to sit for 5 minutes. Garnish with feta and fresh oregano and serve with tzatziki for dipping! Dig in and Enjoy!
