Honey Garlic Shrimp
Ingredients:
1/3 cup honey
1/4 cup soy sauce
2 garlic cloves, minced
Optional: 1 tsp of minced fresh ginger
1 lb of uncooked shrimp (peeled and deveined)
2 tsp olive oil
Garnish: chopped green onion
Directions:
1. Whisk honey, soy sauce, garlic and ginger (if using) together in a medium bowl.
2. Place the shrimp in a large resealable container or ziplock bag. Pour 1/2 of the marinade over the shrimp. Allow the shrimp to marinate for 15 mins. While this is happening, make the rice and steam up some broccoli.
3. Heat olive oil in a skilled over med-high heat. Add the shrimp in the skillet. (Discard of used marinade) Cook shrimp on one side for about 45 seconds, then flip to other side. Pour in the remaining/remaining marinade until heated through - about a minute or two.
4. Serve shrimp hot over a bed of rice with marinade, a garnish of green onion and the veggies.
Enjoy!
