There is nothing worse than getting home after a long day to stare into your fridge with no inspiration and no plan. The dinnertime struggle is real!

New this year, each week, I will be sending out a blog post like this where I outline a few winning, quick and easy recipes that your whole family is sure to love. I’ll include substitutions and make ahead instructions where possible. Let’s keep the recipes budget friendly and balanced, with whole foods and simple preparation. My hope is to take the stress and hassle out of your evenings, so you can reclaim your kitchen time with a little bit of ease and joy.

One Pan Baked Meatballs
You will love these incredibly tender, melt-in-your-mouth meatballs. These cheesy, baked meatballs are all made in one (just ONE!) pan! They are a classic, Italian inspired meatball, but we used store-bought tomato sauce to make it easy and doubled up the recipe so that we have lots of extras to save in the freezer for your future self. You can thank yourself later.
20-Minute Creamy Tuscan Gnocchi
Whether you are treating yourself to a cozy dish at home or impressing friends at a dinner party, this dish is a winner every time! This creamy Tuscan gnocchi with Italian sausage and sun-dried tomatoes comes together in one pot and is one of our FAVOURITES! You will love how hearty it tastes but is threaded with good-for-you veggies. Side salad is optional.
Chicken Chow Mein
Chicken Chow Mein is a take-out favourite, and also incredibly easy to make at home with chicken, vegetables and the classic chow main noodles. It’s a one pan meal that is so satisfying and so much healthier than getting it delivered! This recipe gets rave reviews!
Orange & Almond Granola
My love affair with granola runs deep and I try not to bore you all over on instagram with the many variations that I’m constantly creating over here! This one is infused with citrusy orange and the warm, nutty crunch of almonds. Having a stock of this on hand makes for easy, healthy and delicious snacking and breakfast options.
