Here’s a peek into what our family is eating this week. I hope it offers some inspiration. The grocery list is included below.
Background on me, and our Routine:
I live with my husband and our three teen/tween kids, 15 year old Sadie, 14 year old Tiggy and and 11 year old Sully. We live Toronto, Canada and are very fortunate to have a huge variety of grocery stores and restaurants nearby.
Our schedule during the week is a little bonkers. On any given night, we have volleyball practice (Sadie), dryland training (Tiggy) and so much hockey (Sully). We rarely are all at home on the same night and at the same time, so I prepare meals that can be deconstructed, and built by each individual in a way that works for them. I will always keep fresh, cut veggies in the fridge, and my go-to vegetable side dishes to serve with dinners are steamed broccoli, edamame and a very simple side salad with mixed greens.
Honestly, breakfast and lunch are pretty boring around here. Weekday breakfasts are a rotation of ‘dunkers’ (dippy/soft boiled eggs with toast), oatmeal, cereal, or toast with nut butter. Usually I put out some seasonal fruit. Time permitting I will make a quick batch of pancakes or French toast. On the weekends in the ski season, our breakfasts are even more simple - we grab what we can to get everyone to the hill between 8-9 am.
Weekday lunch is also pretty predictable: leftovers, a big simple salad, and sandwiches in the kids’ packed lunches.
Although our dinners are marginally more exciting, because I insist on eating something different and delicious that is also nutritious. That’s what I’m going to focus on here. I hope this helps simplify your week! 🙂
Beef Bulgogi Bowls
Beef Bulgogi is this insanely delicious, marinated beef that is served over rice and topped with a million, mouthwatering toppings. We’re making this Asian inspired, build-your-own-bowl on a Monday night because you can prep some of this on Sunday. Trust me. Your Monday evening dinner will be ready in about 5 minutes. It’s a total dream, if you ask me! Just place all the ingredients into the centre of the table and let everyone create their own bowl. The ingredient list is long, but that’s only because there are so many topping options. You probably have a lot of these on hand. The kimchi is should not be optional. It’s the only non-negotiable. Add it to your grocery list!!
Sheet Pan Gnocchi with Brussels and Sausage
Keep an open mind on this one….I know it might not seem super kid-friendly, but what I love about this dish is that it’s deconstructable: meaning, each family member can choose the parts of the dish that they like best. We’re having this on Tuesday because it can be made and picked at throughout the night, depending on when my son gets home from hockey and before my daughter leaves for volleyball. The gnocchi gets crispy and delicious when it is cooked in the oven in this way, the veggies get caramelized and rich. It’s delicious.
Easy, Creamy, Chicken Marsala
To me, this is comfort food. Made with golden, crispy, pan-fried chicken, a mushroom-filled creamy Marsala wine sauce and a good kick of garlic, this Chicken Marsala recipe is next-level! You can make this recipe in about 30 minutes. It’s well worth it!
I love to serve this Marsala recipe over a bed of noodles such a fettuccine or angel hair. The recipe makes enough creamy sauce to pour over whatever you’d like to serve it with - potatoes or rice, or keep it lower in calories and enjoy over cauliflower rice or zucchini noodles!
Cinnamon Swirl Banana Bread
I’m adding this to your weekly meal plan because you are going to want to have this recipe in your repertoire. My son, who doesn’t love banana bread gave this an 8/10. But don’t take his word on it….this banana bread is the best way to use up those ripe bananas sitting on the counter. You can pop thick slices of this into the kids’ lunch boxes…or just save it for a little afternoon snack for yourself!
