OMG Nutella Hot Chocolate Cookies

I am calling these OMG Nutella Hot Chocolate Cookies because I literally gasped “OMG” when I took my first bite! I was on a mission to create a hot chocolate cookie - one that tasted like a sip from a warm mug on a cold day, but they came out even better than I imagined!

There something about the texture of this cookie….it’s got all the right feels…it’s got a little chew, I love the marshmallow that gets all toasty in the oven, the Nutella gives it that hazelnut depth that is a bit unexpected…..

These Nutella Hot Chocolate Cookies will melt in your mouth. I dare you to stop at just one!

OMG Nutella Hot Chocolate Cookies

Ingredients:

  • 1/2 cup Butter softened (not melted)

  • 1 cup Brown Sugar

  • 1/2 cup sugar

  • 1/2 cup Chocolate Nutella Spread

  • 2 Eggs

  • 1/3 cup Cocoa Powder, unsweetened

  • 1 3/4 cup Flour

  • 1/2 tsp Baking Soda

  • 1/2 tsp Baking Powder

  • 1/2 tsp Salt

  • 1 - 1 1/2 cups good quality chocolate bar chopped (I used Lindt)

  • Sea Salt for sprinkling

Directions:

  1.  Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

  2. In a large mixing bowl, cream butter and sugars for 4 minutes or until creamy.

  3. Add Nutella and cream for 1 minute longer. Add eggs and mix.

  4. Stir in cocoa powder, flour, baking soda, baking powder, and salt. Mix just until combined.

  5. Stir in chocolate chunks, reserving about 1/4 cup of chunks to place inside each cookie.

  6. Wrap dough in plastic wrap and chill for at least 30 minutes - 1 hour, preferably overnight.

  7. Once the dough is chilled, roll into balls and place on baking sheet.

  8. Place a few chunks of chocolate in the centre of each cookie dough. Press a marshmallow or two into the top.

  9. If using sea salt, lightly sprinkle with a touch of salt.

  10. Bake for 9 - 12 minutes.

 

This is the most delicious chocolate hazelnut cookie - soft and gooey on the inside, and a little chewy on the outside. It brings back all the nostalgia of a warm mug of hot chocolate on a cold day!
