Miso Marinade:

  • 2 tablespoons white miso paste

  • 2 tablespoons rice vinegar

  • 2 tablespoons maple syrup

  • 2 tablespoons soy sauce or low-sodium tamari

  • 1 large garlic clove, grated

  • 1 teaspoon grated ginger

  • 1/8 teaspoon gochugaru or red pepper flakes

  • 1 1/2 pounds boneless, skinless chicken thighs

For Serving (optional):

  • Corn on the cob

  • Fresh herbs such as basil or cilantro

Directions:

  1. Marinade the Chicken: In a large bowl, combine the 2 tbsp miso paste, 2 tbsp maple syrup, 2 tbsp rice vinegar, 2 tbsp tamari or soy sauce, 1 garlic clove, grated, 1 tsp fresh ginger, minced, 1/8 tsp (or to taste) Gochujang or red pepper flakes. Stir to combine.

  3. Preheat the grill to medium-high heat (450-500F). Remove the chicken from the marinade and allow as much excess marinade to drip off. Grill the chicken for 3-4 minutes per side (6-8 mins total). Allow the chicken to rest for 15-0 minutes before slicing.
