Skillet Lasagna
I don’t know anyone who doesn’t love lasagna - it’s a classic for a reason. But I don’t love the time and energy it takes to prepare. That’s why this 30 minute Skillet Lasagna recipe needs to be in your back pocket!
You get the layers of cheese-y goodness and comfort in this one dish wonder, in about 30 minutes. What is not to love?
I made this recipe as simple and as nutritious as I could - with shortcuts and veggie boosts along the way.
Here’s What You’ll Need:
I used a mix of ground beef and mild Italian sausage. I like the depth of those two meats mixed together. If you like things a little on the spicer side, feel free to sub in hot Italian sausage!
Onions and garlic - diced and minced, respectively.
Simple spices from the spice rack: Oregano, Basil and Red Pepper Flakes
A jar of marinara sauce - I like Rao’s
Lasagna Noodles - be sure to grab the oven ready kind.
Cheese - So much cheese! But it’s not overpowering! I used a mix of ricotta, mozzarella and parmesean
Fresh Basil - to serve. You can also use parsley.
Weeknight Skillet Lasagna
Ingredients:
½ lb ground beef
2 Italian sausages
1 onion, diced
4 cloves garlic, minced
1 jar marinara sauce (my favourite is Rao’s
2 cups beef broth
12 lasagna noodles (8 minute noodles)
1 tsp dried basil
1 tsp dried oregano
½ tsp red chili flakes (optional)
2 cups mozzarella, shredded
1 cup ricotta
2 cups spinach, finely chopped
Parmesan for topping
Fresh Basil for garnish
Directions:
Dice your onion, mince your garlic and shred your cheese. Break up your lasagna noodles into quarters.
Heat a large pan over medium high heat. Add beef and sausage and break up with a wooden spoon. Add in your onion, 1/2 tsp salt and mix well. Cook through, about 5-7 minutes.
Add your garlic, 1 tsp basil, 1 tsp oregano, 1/2 tsp chili flakes and cook for 1 minute. Add marinara sauce, 2 cups beef broth and your noodles. Bring to a simmer and cook for 10 minutes, stirring frequently so your noodles don't stick to the bottom. Not all your noodles will submerge so keep pushing them under and mixing while they cook.
While your noodles are cooking, preheat your oven to broil. In a small bowl, mix 1 cup ricotta with 1 cup mozzarella. Stir in your chopped fresh spinach.
Once your noodles are cooked through, stir in half of your ricotta mixture. Dollop the remaining ricotta mixture throughout and top with remaining mozzarella. Broil for 3-5 minutes until golden brown. Top with fresh basil and parmesan and serve (it gets even better if you let it sit for 5-10 minutes).
Serve with steamed broccoli, green beans or a simple side salad! Also, garlic bread is never a bad idea!
