Slow Cooker Chicken Teriyaki

Easy Weeknight Teriyaki Chicken

The prep in this recipe takes no more than 10 minutes and by the time dinner rolls around, you have yourself the most flavourful, better-than-take-out meal that the whole family will devour!

By all means, purchase a store-bought version of the sauce to make this even easier, but making it yourself is super simple and it tastes fresher. You’ll notice a big difference in the final dish.


Slow Cooker Chicken Teriyaki

Ingredients:

  • 1 tbsp cornstarch

  • 1 tbsp room temperature water

  • 3 tbsp brown sugar

  • 1/4 cup honey

  • 1/2 cup soy sauce

  • 1/4 cup rice wine vinegar (sub apple cider vinegar)

  • 2 tsp minced garlic

  • 1-2 tsp fresh ginger, minced

  • 2 small onions, chopped (or 1 large onion)

  • 4 boneless skinless chicken breasts (approx 2 lbs total)

  • for serving: sesame seeds and chopped scallions

    Directions:

  1. Stir the cornstarch and water together in a medium saucepan until combined, then set the saucepan over medium heat. Add the brown sugar, honey, soy sauce, vinegar, garlic, and ginger. Allow to simmer while whisking occasionally. Bring to a boil and allow to boil for 1 minute, then remove from heat.

  2. Place chopped onion and chicken into a 4 quart or larger slow cooker. (This is the newer version of mine. I love it!) Pour teriyaki sauce on top. Cook on high for 3 hours or on low for 5 hours.

  3. Remove the chicken from the slow cooker and, using 2 forks, shred into smaller pieces. Place back into the slow cooker and stir to combine. Cook for 1 more hour on low, stirring occasionally.

  4. Garnish with sesame seeds and scallion, if desired, and serve on top of cooked rice and alongside steamed vegetables.
