Summer Strawberry Crisp

I have been humming and hawing about what to make with the abundance of gorgeous early season fresh strawberries lately and finally it occurred to me to bring back my childhood favourite - Summer Strawberry Crisp!

This was a family favourite growing up! One of our traditions after school got out was to hit the pick-your-own patch near our cottage and inevitably, we’d get carried away and come home with buckets and buckets filled with warm gorgeous fresh-off-the-vine strawberries. We would make this every year and the sweet smell that would fill the kitchen is pure bliss. It’s something I still do to this day with my own kids.

This dessert is seriously irresistible on hot summer days!

Strawberries don’t need much embellishing - they are perfect as they are - but when you combine them with a crunchy, oat topping and then serve it all alongside vanilla ice cream, you get an elevated summer experience that you don’t want to miss out on!

Summer Strawberry Crisp

Ingredients:

  • 5 cups fresh strawberries, hulled and quartered

  • 1/4 cup white sugar

  • 1 tsp vanilla extract

  • 3 tbsp cornstarch

For the Crumble:

  • 1 cup flour (you can sub gluten free)

  • 1/4 cup brown sugar

  • 1/3 cup white sugar

  • 1/2 cup old fashioned rolled oats

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1/2 cup butter, melted

Directions:

  1. Preheat the oven to 350F and grease a deep pie dish or baking dish with cooking spray. Set aside.

  2. To a bowl, add the strawberries and the 1/4 cup granulated sugar. Stir to combine then add in the vanilla and cornstarch. Add this mixture to your prepared baking dish. Set aside.

  3. To a bowl, combine the flour, both sugars, oats, cinnamon and salt. Stir and then pour in the melted butter and stir until the mixture is crumbly.

  4. Sprinkle this crumb mixture over the strawberries.

  5. Bake for 35-40 minutes until the fruit is bubbly and the oat topping is golden. Allow it to cool slightly and serve this strawberry crisp warm with vanilla extract.
