Super Chewy Chocolate Chip Cookies

Just in time for the weekend…Are you ready for the most epic chocolate chip cookie EVER? 🍪🍪🍪. I’m not exaggerating ….I’ve been making cookies for my chocoholic husband for 20 years and these ones, THESE ONES are the best ever. And I didn’t even make them (queue bruised ego!). 🤷‍♀️⁠

⁠My 13 year old daughter whipped these up after school this week using a recipe from @krollskorner. ⁠

⁠If you love a big, soft, chewy chocolate chip cookie that is loaded with chocolate chips and gooey in the centre, this is the right #cookierecipe for you

Super Chewy Chocolate Chip Cookies

Ingredients:

  • 1 1/4 cup all-purpose flour⁠

  • 3/4 cup cake flour⁠

  • 1 tsp corn starch⁠

  • 1/2 tsp baking powder⁠

  • 1/2 tsp baking soda⁠

  • 1/2 tsp salt⁠

  • 1/2 up cold butter, cubed (8 tbsp)⁠

  • 1/2 cup light brown sugar⁠

  • 1/4 cup white sugar⁠

  • 1 large egg⁠

  • 1 egg yolk⁠

  • 1 tsp vanilla⁠

  • 2 cups semi-sweet chocolate chips⁠

Directions:

  1. Preheat the oven to 400F. ⁠

  2. Whisk together the flours, baking soda, baking powder, cornstarch, and salt. Set aside⁠

  3. Place the cubed butter into the bowl of a stand mixer and with the paddle attachment, cream the butter on medium low speed for 30 seconds. Add in the brown sugar and mix for another 30 seconds. Then add in the white sugar and mix until light and fluffy. Add in the egg and the egg yolk, vanilla and blend until mixed. ⁠

  4. With the mixer on low speed, gradually add in the flour mixture. Add it a little at a time until the ingredients are incorporated. Then stir in the chocolate chips. ⁠

  5. Measure out your cookies to your preferred size and place on a cookie sheet, lined with parchment. Keep the cookies nice and tall - don’t flatten them.⁠

  6. Bake for 10 minutes or until the tops are golden brown. ⁠

  7. Let them rest on the cookie sheet to cool. ⁠
