15-Minute Peanut Noodles
When you simple CAN NOT with dinner, try this. It takes about 15 minutes. It’s delicious. You can probably make it with things in your pantry. (especially if you have downloaded my perfect pantry checklist!).

Super Quick Peanut Noodles
Ingredients:
3 pkgs ramen (or noodles of your choice)
3-4 cups broccoli florets, appox the same small size
1 cup frozen, shelled edamame
1/2 cup peanut butter
1/3 cup soy sauce
3 tbsp rice wine vinegar
1 tbsp sriracha (or to taste)
1 tbsp honey
Optional toppings to amp up the flavour: fresh cilantro, sliced scallions, chopped peanuts, grated carrot, sesame seeds….whatever you like!
Directions:
Bring a large pot of water to a boil. Season it with salt.
Place the ramen into the boiling water. After about 1 minute, use tongs to gently break up the ramen. Add the broccoli and cook for 1 more minute and then add the shelled edamame. Test the ramen for doneness. It should have some chew to it. Using a coffee mug to scoop out some of the pasta water.
Meanwhile, make the sauce by stirring together the peanut butter, soy sauce, rice vinegar, sriracha and honey. Season this to taste - if you want it saltier - add more soy sauce! A little more kick? Add more sriracha! Creamier? More peanut butter!
Drain the pasta and veggies and add them back into the pot.
Pour half the peanut sauce over the noodles and veggies with 2 tbsp of the pasta water. Toss to combine and add more sauce until it’s right for you. I used the whole thing but do what tastes good!
Divide between bowls and pile the noodles high with whatever garnishes you have on hand! Enjoy!
