Spring Roll in a Bowl

Spring Roll Bowls are what weeknight dreams are made of!

Spring Roll in a Bowl is one of those meals that my whole family LOVES and every time I make it we wonder why we don’t make it more often! All 3 of my kids will devour it! I love the texture and flavour of this Asian inspired stir-fry dish. This version is so packed full of vegetables and comes together in less than 30 minutes, making it a simple and delicious weeknight meal. This recipe served my family of 5 with leftovers.


Spring Roll in a Bowl

Ingredients:

For the yummy sauce:

  • 2 tbsp butter
    1/2 cup mayo
    1-2 tbsp hot sauce, like sriracha
    1 tbsp lemon juice
    1 tsp onion and garlic powder
    1/2 tsp granulated sugar
    1/2 tsp kosher salt, plus more to taste
    2 tbsp water

For the Stir Fry

  • 1 bunch of green onions
    1 tbsp fresh grated ginger
    2 cloves of garlic
    2 tbsp olive oil
    1 tsp sesame oil
    1 lbs ground meat (I used pork and beef but chicken and turkey would be great)
    1 tbsp chili sauce
    1 tsp soy sauce
    1 bag of broccoli slaw
    2 tbsp fresh lime juice

    Optional for garnish: sesame seeds, sliced green onion

Directions:

  1. Prepare the yummy sauce first so the flavours have time to mingle. Melt the butter in the microwave, whisk in the mayo, chilli sauce, lemon juice, garlic and onion powders, sugar and salt and water. Season with more salt if desired. Set aside.
    2. Prep the aromatics for the stir-fry:slice the green onions, grate the garlic and the ginger.
    3. Heat a large skillet over medium high heat. Add the olive and sesame oils, followed by the ground meat. Brown the meat, breaking it up with a wooden spoon. Cook for 3-5 mins until it starts to turn brown. Add the green onions, ginger, garlic, chilli sauce and soy sauce. Cook the meat until it is no longer pink.
    4. Add the broccoli slaw and toss to coat in the meat. Continue cooking until the vegetables soften. About 5 more minutes.
    5. Remove the stir-fry from the heat and add 3/4 of the yummy sauce and the lime juice. Stir to combine fully.
    6. Garnish and serve over rice, ramen noodles or in a tortilla! Top with the leftover sauce.
