Air fryer Roasted Potatoes with Chipotle Mayo
If you need a side dish that is easy to prepare and will absolutely WOW your dinner companions, you’ve got to make these Air fryer Roasted Baby Potatoes with Chipotle Mayo! We couldn’t stop popping these flavourful little bites into our mouth - the Chipotle mayo is subtly spicy, and the baby potatoes are roasted to perfection in the air fryer.
What you need to make these Air Fryer Potatoes
First off, you’ll need your air fryer! I own this one and this one and love them both. I use the smaller air fryer at the cabin on the weekends. I love the versatility that the double basket offers with the larger air fryer. I’m happy to answer any questions you have about either if you are in the market for one.
Baby potatoes - I used a combination of white and red potatoes, but any variety will do.
Simple seasonings - you probably have all the spices you need for the recipe on hand, because you’ve downloaded my FREE Pantry Staples Checklist. You’ll need cumin, smoked paprika, chipotle chili powder, and salt.
Mayo and sour cream - if you only had one or the other, you could omit the other but they compliment each other beautifully so I would try to use both. You can sub Greek yogurt for the sour cream if you needed to.
Lime - the lime is the perfect bright tart that balances the spice in the mayo.
Chives - I garnished this with a little sprinkle of chives, but cilantro or parsley would be lovely too.
Air Fryer Roasted Potatoes with Chipotle Mayo
Ingredients:
1 lb baby new potatoes, cut into uniform sizes
1 tbsp olive oil
1 tsp smoked paprika
1 tsp salt
1 tbsp chives, chopped for garnish
Chipotle Mayo:
1/4 cup mayo
1/4 cup sour cream
1 tsp chipotle chili powder
1/2 tsp salt
1/2 lime, juiced
Directions:
Preheat your air fryer to 400F. Cut the potatoes into uniform sizes (1/2 or 1/4) and toss with the olive oil, smoked paprika, and salt in a bowl until well coated.
Lay the potatoes in a single layer in the basket of the air fryer. Set the timer to 20-24 minutes. Smaller potatoes will cook faster. When the air fryer alerts you, shake the basket (about 1/2 way through cooking) to ensure an even cooking and a crispy outer edge.
While the potatoes are cooking, combine the ingredients of the Chipotle Mayo in a small bowl. Smear this on to a serving platter.
Top the mayo with the roasted potatoes and garnish with chives. Try not to eat them all before you get them to the table!

Is air frying better than baking?
The air fryer creates a considerably more crispy exterior to the potato than the oven will. Also, the interior of the roasted potatoes will be fluffier and lighter.
How long does it take to get these roasted potatoes soft in the air fryer?
It will depend on the size of your potatoes. The potatoes are cut in small, similar sizes and cook up in 20-24 minutes at 400F. If your potatoes are larger, they will take more time. It’s a good idea to check them from time to time by piercing them with a fork or a sharp knife to determine readiness.
Is it safe to use aluminum foil or parchment paper in the air fryer?
It is safe to use either, as long as they don’t touch the heating element. Be sure to put the aluminum foil or parchment above the rack and below the food. This way, they won’t blow around inside your air fryer and will catch any food bits, making easier clean up.
