Bacon and Cheddar Broccoli Salad
Here’s a new way to eat broccoli.
I’m not going to lie, broccoli is not my favourite veg. But that might be because I never had encountered this broccoli salad, with bacon and nuts, cheese and a creamy dressing.
I’m not usually a fan of raw broccoli, but the way the broccoli florets soak up the creamy mayo and vinegrette – softening a bit but remaining crisp – and then the salad is made even tastier with the addition of smoky bacon, shredded sharp Cheddar, and crunchy sunflower seeds!
Bacon and Cheddar Broccoli Salad
Ingredients:
3 small crowns of broccoli, chopped
1/2 red onion, diced
10-12 slices of bacon, crumbled or chopped
1/2 cup salted sunflower seeds
8 oz of sharp cheddar cheese, shredded
1 cup mayo
3 tbsp vinegar
1/4 cup sugar
Directions:
Whisk together mayo, vinegar and sugar. In a large bowl, mix broccoli, onion, bacon, cheese and seeds with the dressing. Toss well.
This saves well in the fridge for a few days, so make extra and you’ll always have a quick veggie hit on hand.
