Better Than Take Out Chicken Fried Rice
1 tsp sesame oil
1 tsp neutral oil
4 cups leftover rice
2 cups cooked chicken, cubes or shredded
1 small onion, diced
2 garlic cloves, minced
2 cup of fresh or frozen vegetables, diced into 1/2” pieces
2 eggs
2 tbsp soy sauce
2 tbsp lemon juice
2 tsp sesame seeds (for garnish)
1/4 cup cilantro (for garnish)
Directions:
Warm your largest skillet over medium-high heat. Add in the sesame oil and the neutral oil. When hot, add in the onion. Sauté for about 3 minutes then add in the garlic. Stir for about 1 minute.
Add in the rice, vegetables, soy sauce and lemon juice. Smooth the rice into a flat layer in the skillet and allow it to cook, undisturbed, for 3 minutes. This will crisp it up!
Push the rice over to leave about 1/4 of the skillet empty. Add a little bit of sesame oil to coat the empty part of the skillet and crack 2 eggs in. Scramble them quickly. Once cooked, stir them into the rice.
Garnish with 1/4 cup chopped cilantro and 2 teaspoons sesame seeds. Dig in!
