This versatile dish is a favorite in our households…I love it because it has a perfect blend of protein, veggies, and savoury goodness. My kids love it because it is delicious. Whether you're using leftover chicken or starting from scratch, this recipe is guaranteed to become a go-to weeknight dinner.

Better Than Take Out Chicken Fried Rice

  • 1 tsp sesame oil

  • 1 tsp neutral oil

  • 4 cups leftover rice

  • 2 cups cooked chicken, cubes or shredded

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 2 cup of fresh or frozen vegetables, diced into 1/2” pieces

  • 2 eggs

  • 2 tbsp soy sauce

  • 2 tbsp lemon juice

  • 2 tsp sesame seeds (for garnish)

  • 1/4 cup cilantro (for garnish)

Directions:

  1. Warm your largest skillet over medium-high heat. Add in the sesame oil and the neutral oil. When hot, add in the onion. Sauté for about 3 minutes then add in the garlic. Stir for about 1 minute.

  2. Add in the rice, vegetables, soy sauce and lemon juice. Smooth the rice into a flat layer in the skillet and allow it to cook, undisturbed, for 3 minutes. This will crisp it up! 

  3. Push the rice over to leave about 1/4 of the skillet empty. Add a little bit of sesame oil to coat the empty part of the skillet and crack 2 eggs in. Scramble them quickly. Once cooked, stir them into the rice.

  4. Garnish with 1/4 cup chopped cilantro and 2 teaspoons sesame seeds. Dig in!

    Serve and enjoy!
