I like to eat this for breakfast or after dinner for a little hit of sweetness. The secret - browned butter! Maybe my next insta account is going to be called The Brown Butter Babe. So GOOD!

This zucchini bread is a step above the rest, thanks to the addition of browned butter. The process of browning the butter adds a deep, nutty flavour that perfectly complements the chocolate chips and the subtle sweetness of the zucchini. The result is a moist, rich, and utterly irresistible bread that you'll want to make again and again.

Brown Butter and Chocolate Chip Zucchini Bread

Ingredients:

  • 2 medium zucchinis, grated on a box grater to give about 2 cups

  • 1/2 cup butter

  • 1/2 cup maple syrup

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1 cup sen-sweet chocolate chips

Directions:

  1. Start by making the browned butter. Watch it closely. It will start to foam and that is when you want to remove it from the heat and set aside.

  2. Place the shredded zucchini in a strainer or on a clean towel and sprinkle with some salt. Allow to sit for about 10 mins.

  3. In a large bowl, stir together the maple syrup, eggs, vanilla and when the butter is cooled, add it to the mix.

  4. In the meantime, in a separate bowl, combine the flour, soda, salt, cinnamon.

  5. Add the dry ingredients to the wet ingredients and mix until just combined. Leave a little white flour bits. Don’t over mix!

  6. Add in the chocolate and finish stirring. Pour the batter into a prepared loaf pan.

  7. Bake for 50 minutes or until the centre is set. Allow the bread to cool for about 30 mins.
