Creamy Tomato Soup (minus the Cream)

As the first cool breeze of late August rolled in this week, I found myself craving something warm and comforting, yet still light enough to honour the tail end of summer. I decided to whip up this delicious Creamy Tomato Soup—without a drop of cream in sight!

The secret to this velvety texture? Cashews. When blended with the rich, robust flavours of canned San Marzano whole tomatoes and my homemade chicken stock (you can use store bought!), the cashews create a luscious, creamy consistency that feels indulgent, yet it’s completely dairy-free.

This soup couldn’t be easier to make, which is perfect for those days when you want something wholesome without spending hours in the kitchen. This Creamy Tomato Soup (without any Cream!) is something you can meal prep and enjoy for dinner on cool evenings or take for an easy, healthy lunch.

This Creamy Tomato Soup is a healthy, nourishing option that I’m thrilled to share with you all.

Oh! And grab those adorable little grilled cheese croutons….they are worth the extra 5 minutes!

What do I need to make this Creamy Tomato Soup (minus the Cream)?

If you have my Perfect Pantry Checklist, you are in luck because you probably already have most of these ingredients on hand!

Canned Tomatoes - I used whole, peeled, San Marzano type tomatoes. These can sometimes be hard to find. They are more expensive than the other kinds of canned tomatoes, but worth it, IMO.

Yellow Onions - If you don’t have yellow onions on hand, any type of onion will do. You can even try a leek!

Carrots - these provide a little bit of sweetness. You could try subbing in a sweet potato instead.

Garlic - If you don’t have any garlic, you can sub in 1/2 teaspoon garlic powder per garlic clove.

Chicken Stock - if you are vegetarian, sub vegetable broth instead!

Cashews - the secret ingredient to the creaminess of this soup. If you can’t do cashews, you an absolutely use heavy cream. Or even white beans.

Honey - this is such a lovely balance to the natural acidity in the tomatoes. If you don’t have, just sub in equal amounts of sugar.

 

Creamy Tomato Soup (minus the Cream)

Salad Ingredients:

  • 4 tbsp butter

  • 2 onions, chopped

  • 2 carrots, peeled and chopped

  • 4 garlic cloves

  • 2 cans (28oz) San Marzano Whole Tomatoes

  • 2 cups chicken stock (or sub vegetable stock if vegetarian or vegan)

  • 1/2 cup cashews

  • 2 tsp salt

  • 1/2 tsp pepper

  • 1-2 tbsp honey (to taste)

Directions:

  1. Add the 4 tbsp butter, the 2 chopped onions, 2 chopped carrots and the smashed garlic cloves into a large stock pot or dutch oven and cook for about 5 minutes.

  2. Add in the chicken stock, the 2 cans of whole, peeled tomatoes, and the cashews. Bring this to a boil. Reduce the heat to medium low, cover the pot and simmer for 45 minutes.

  3. Add the 1 tbsp honey to the pot and carefully transfer to a high powered blender. You will probably need to work in batches. Be careful not to fill the blender to full! Blend on high speed for 1 minute or until totally smooth. Taste and add more salt, pepper or honey, as needed.

  4. Ladle the soup into bowls and serve with your favourite tomato soup side kick! For me, it’s a thick slice of sourdough with a smear of salted butter. But those cute little grilled cheese croutons are a close 2nd!
