Crunchy Granola Clusters

If you’ve been around here for a bit, you know I LOVE granola! I think I’ve been eating the same breakfast for about 20 years. If it’s not broken, why fix it?? But I”m always looking for ways to improve my granola game.

If you’re looking for a granola recipe that can do double duty as a breakfast option AND a snack, look no further! This is as delicious and nutritious any time of day! Packed with wholesome ingredients and bursting with classic flavours, these clusters are sure to satisfy your cravings while keeping you fueled and energized.

How to serve up Crunchy Granola Clusters

Enjoy these Crunchy Granola Clusters on their own, or sprinkle them over yogurt, smoothie bowls, or ice cream for an added crunch. I’ve even added them to a salad! However you choose to enjoy them, these clusters are sure to become a favourite in your snack rotation.


Crunchy Granola Clusters

Ingredients:

  • 1/4 brown sugar

  • 2 tbsp honey

  • 1/4 cup coconut oil

  • 3 cups oats

  • 1/2 cup shredded unsweetened coconut

  • 1/2 cup slivered almonds

  • 1/2 cup raisins (or cranberries or tart cherries)

  • 1 tsp cinnamon

  • 1 tsp salt

  • 1 tsp vanilla extract

  • 1 egg white

Directions:

  1. Preheat the oven to 300F.

  2. Heat the coconut oil, brown sugar and honey over low heat until melted together.

  3. In a large bowl, combine the rest of the ingredients, except the egg white.

  4. Stir the warm sugar mixture into the oat mixture and mix well. Stir in the egg white and ensure every thing is well mixed.

  5. Bake in a 9 x 13” baking dish and pack everything in quite firmly for 40 minutes. You want the clusters to stick together so press them in firmly.

  6. Try to resist digging into the granola when it comes out of the oven. Let it cool for at least 1 hour.
