Double Chocolate Zucchini Loaf
If you are anything like me, you sometimes get carried away while out grocery shopping or at the Farmer’s Market, and find yourself with a few too many zucchini after swearing you’d grate them into the kids tacos and eat zoodles all week. And now they are looking a little neglected at the back of the crisper. Don’t fret! Let’s make something even more exciting than zoodles! Let’s transform those lowly zucchini into a gorgeous and fudge-y and chocolate-y Double Chocolate Zucchini Loaf, using cocoa powder and lots of chocolate chips!
The reward on this Double Chocolate Zucchini Loaf is 10x the effort! You won’t believe how easy it all is to throw together. All the baking basics; think flour, eggs, sugar, baking powder, salt, etc….are tossed together into a fudgey batter that totally camouflages the possibility that there is any zucchini in there at all!
I find using a silicone spatula is the way to go to get all that chocolate goodness out of the bowl and into the baking dish. I’ve been using a set from Mercer Culinary Tools that has made the job easier.
Double Chocolate Zucchini Loaf
Ingredients:
11/2 cups shredded zucchini (I used my new shredding tool from @MercerCulinary and it truly made the job so much better!
1/4 cup plain Greek yogurt
1/3 cup neutral oil (I used vegetable oil)
1/2 cup brown sugar
1/3 cup white sugar
2 tsp vanilla extract
2 eggs at room temperature
3/4 cup cocoa powder
3/4 cup all-purpose flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup semi-sweet chocolate chips
Directions:
Preheat the oven to 350F. Using a cheese grater, grate the zucchini onto paper towel or a clean kitchen towel. Press on the zucchini to remove some of the moisture. This is the grater I was gifted from Mercer Culinary and it is incredibly sharp and easy to use.
In a large mixing bowl, combine the 1/3 cup oil, 1/4 cup yogurt, 1/3 cup white sugar and 1/2 cup brown sugar. Mix to combine. Add in the eggs, one at a time and the vanilla. Whisk it together well then fold in the 11/2 cups grated zucchini.
In a separate bowl, combine the 3/4 cup flour, 3/4 cup cocoa powder, baking soda, baking powder and salt.
Stir the wet ingredients into the dry ingredients and mix until just combined. Then stir through the 1/2 of the chocolate chips.
Pour the batter into a loaf pan that has been sprayed with non-stick spray. Top with the reserved chocolate chips.
Bake for 45 minutes or until a toothpick inserted into the middle of the loaf comes out clean.
Try to allow it to cool before slicing into it!
