My Meal Plan for Feb 11th (+ a few odds and ends you didn’t ask for but might enjoy)
Welcome back to my weekly post where I share what I’m inspired to cook for the week, in hopes of inspiring you with easy weeknight dinner ideas.
If you’ve been here since the beginning, you know that I share 3 (ish) dinner ideas and a fun recipe that might be a snack or a baking suggestion. I want to leave a little space in your calendar for meals out, take out on the way home from hockey practice or just a day to use up leftovers.
As always, there will be a grocery list included and maybe a few meal-prep-adjacent things that I’m into.
Question for you: I am fine tuning these meal plans and any and all feedback is so appreciated! I want to make these meal plans better or more usable. Do you need more or less inspiration? Sometimes I see meal plans that provide a breakfast, lunch and dinner options for all 7 days and I find it overwhelming. I feel like if I have a plan for just a 3-4 meals, I’m much more likely to commit to those meals. What about you?

Easy Butter Chicken
If there is one meal you make this week, let it be this one! We ordered in Indian food last week and I couldn’t believe how expensive it was. Truthfully, this recipe couldn’t be easier and it tastes better than the take-out we ordered. It also freezes beautifully.
This is the perfect, 20 minute meal that your whole family will devour. I served it with rice and steamed broccoli for my kids, but Fras and I enjoyed it like this and it was a perfect weeknight meal.
It’s game day, which makes me think of chili. You never need another chili recipe after you try this one. Don’t forget to load on the toppings!
OMG Nutella Hot Chocolate Cookies
These cookies will make you say OMG when you bite into them. They are so good. The perfect little treat!

If you find yourself with leftovers, I purchased a set of food storage containers recently and it’s a relief to have a well stocked selection with matching lids(!) to have on hand. You might want to double some of these meals to make your life easier for your future self. These will come in handy.
