Thai Beef Lettuce Cups with Peanut Dipping Sauce

A weeknight favourite : Thai Beef Lettuce Cups

These fresh, flavour packed Thai Beef Lettuce Cups are a family favourite weeknight meal.

These Thai beef lettuce cups are insanely good, ready in no time, and easy to make, but the best part is that they are also are easy to clean up. Can I get an Amen for that! The ultimate goal = an easy weeknight dinner.

Feel free to just buy your favourite brand of peanut sauce if the ingredient list seems too long, but this one is absolutely delicious and worth it if you have the time.

I served this alongside some steamed rice for my kids, but my husband and I had them just as is, wrapped in lettuce.


Thai Beef Lettuce Cups with Peanut Dipping Sauce

For the beef:

  • 1 lb of ground beef

  • 1/2 red onion, finely diced

  • 4 garlic cloves, minced

  • 1/2 tsp red pepper flakes

  • 1/2 tsp each salt & pepper

  • 1 cup of grated (or very thinly sliced) carrot

  • 1 small bunch of green onions, thinly sliced

  • Butter lettuce or Romain for serving

For the beef sauce:

  • 2 tbsp soy sauce (or coconut aminos)

  • 1 tbsp sesame oil

  • juice of 1 lime

  • 1 tbsp sriracha

  • 2 tsp brown sugar

For the Peanut sauce:

  • 1/4 cup peanut butter

  • 1/3 cup tahini

  • 2 tbsp soy sauce

  • 1 large garlic clove, minced

  • 1 tsp freshly grated ginger

  • 2 tsp rice vinegar

  • 2 tsp maple syrup

  • 1 tsp sesame oil

  • 1-2 tbsp chili oil

  • sesame seeds, for garnish

Directions:

  1. Brown the beef in a large skillet over medium-high heat, breaking it into small pieces.

  2. Add in the onion, garlic, ginger, and seasonings. When the meat is fully cooked, add in the carrot and green onions.

  3. Stir in the meat sauce. Continue to cook on low for 5-7 minutes.

  4. Meanwhile, whisk together the peanut sauce in a medium bowl.

  5. Serve the delicious meat on a bed of lettuce with a drizzle of peanut sauce over top. Garnish with fresh cilantro and sesame seeds.
