Hello there, February! Do we need some gluten-free recipe inspiration?

This weekend FLEW by and I didn’t get a chance to get this out to you on Sunday….I hope it’s not getting to you too late!

Our ski weekends are the most wonderful, but this weekend, my daughters had ‘away’ races, which meant we were driving them all around and there is quite a lot of waiting and watching until they have their turns. They both did so well - Tiggy came first on Saturday and 7th on Sunday. I couldn’t have been more excited for her. That girl has so much grit, determination and drive. It’s a joy to watch her love for competition.

My eldest daughter has been a little sick but she too, just pushes through. She skiis all weekend and then we race back to the city earlier than the rest of the family to get her to her volleyball practices. I love to see her commitment to her team.

And my son was at the NHL All Star’s game in Toronto on Saturday, then didn’t get up north until later Saturday night, and was up early to do his race on Sunday. So, it was a LOT of coming and going, and not a lot of time in the kitchen.

Sometimes, a break is nice. BUT, I do want to get this to you so here it is: your meal plan for this week. This one is a goodie with some of my family’s favourites.

Question for you: Do you need more or less inspiration? Sometimes I see meal plans that provide a breakfast, lunch and dinner options for all 7 days and I find it overwhelming. I feel like if I have a plan for just a 3-4 meals, I’m much more likely to commit to those meals. What about you?

Let me tell you: I KNOW this one sounds a little ho-hum. I do! But you must just put your trust in me and make this DELICIOUS meal. The flavours are so simple and yet….and YET! You won’t believe how easy and surprisingly tasty this meal is. I can’t wait to hear your thoughts on this one! The browned butter, apple cider, sage situation at the end is key. Don’t miss that step!

A perfectly composed salad that will nourish and satisfy, but will also hold over and serve you the following day for lunch! I love a good Niçoise salad and this one, with its still-warm-veggies and bright, zippy vinaigrette will be sure to delight. Serve this with some lovely crusty bread.
