What to Cook this Week January 14th

This week is going to be good!

Here is this week’s meal Plan

Feeding your family is a relentless task. There is nothing worse than getting home after a long day to stare into your fridge with no inspiration and no plan. The dinnertime struggle is real! Meal planning is HARD. Let me help….

Some Meal Planning Tips:

  1. I always have a shopping list on the go in the lists tab on my phone. A list on the fridge works too. Whenever we run empty/low on something, I write it on the list

  2. Once a week, I go through our pantry. This helps me to compile a shopping list of the things we use often and are running low on plus I can see what we have plenty of and I can plan our meals for the week accordingly. This is one of the ways we have significantly reduced our food waste and avoid buying unnecessary items that we already have plenty of. I love the concept of ‘eating down’: where we eat what we already have on hand instead of buying new. This influences our meal plan.

  3. Look at your weekly family schedule and consider;
    + who will be home (do you travel for work?)
    + are there social plans where you need to 'bring a plate' or are you entertaining at home?
    + If there are sports or events, is there something you can make this week and batch it to help your future self out? Something to pull out of the fridge/freezer to just reheat?

  4. Don’t forget about lunch! Lunch is so often forgotten. Choose something that you can make ahead, or double up a recipe so you can have something on hand for a healthy, grab and go option. These glass storage containers are what I use to keep leftovers

It’s pasta but it’s practically a salad.

Creamy, Dreamy, Greeny Pasta

This ultra green sauce is made from a whole head of kale, a clamshell of spinach, nutty parmesan cheese, roasted garlic, and lemon. It might sound daunting but trust me - it’s not. Everything whips together in the blender. You won’t regret this one. Even if you aren’t a fan of kale, this pasta sauce is going to blow your mind. Plenty of bright lemon juice, lemon zest, nutty parmesan and roasted garlic round out the flavours making this a vibrant and bright pasta sauce! You’ll feel good slurping this one up!

Cheesy Green Chili Shrimp Tacos

You will not believe the insane flavour this Cheesy Shrimp Tacos punch with such simple and easy prep! They are so fresh, healthy and delicious….I can’t get enough of them. This is the kind of meal that takes me to a pool somewhere with great service and never-ending margaritas. I hope it does something like that for you!

This one takes some prep….but it’s worth it!

Sheet Pan Sesame Soy Steak with Veggies

This one takes a bit of prep in that you should marinate the steak in advance, but if you can do that, you will so SO glad you did! The flavour of the flank steak is delicious. The marinade is rich with soy sauce, sesame oil and honey.  Everything gets tossed onto a sheet pan and you have a winning weeknight meal.

And of course you’ll need something yummy this week … a little treat! I love, love, love (have I mentioned love?) how these cookies are chewy in the middle and crispy because of the (not so) secret ingredient: cornflakes! These cookies boast the perfect ratio of sweet to salt - especially if you are like me and like to sprinkle just a little bit of flaky sea salt on top before baking! You’ll want to whip these up to have on hand and throw into lunches, or pop into your mouth!
