What to Cook this Week January 28th

This week is going to be good!

We’re slowly crawling our way through January. How are you holding up?

I love that we live in Canada and get all four seasons, but this winter has been off to a bumpy start. It’s been unseasonably mild. And with that, combined with the very short days, it feels extra dark and damp. I miss the bright snow and how the cold air brings with it sunshine. I’m feeling the January blahs more than usual this year. How are you doing? How is it where you live?

I’m always on the hunt for recipes that can double easily are still taste delicious when reheated. Both the Healthy (ish) Bolognese and the Kitchen Sink Beef and Vegetable Soup on this week’s menu do just that. I love it when I do something that I know my future self will appreciate! And if you haven’t yet tried my Baked Blackened Salmon recipe, you are in for SUCH a treat! I can’t wait to hear how it goes for you!

Healthy (ish) Bolognese

Healthy (ish) Bolognese

You will love this giant bowl of bolognese for several reasons: first, it is filled with hidden veggies that you don’t even need to chop (the food processor will do it all for you). Next, it’s a healthy-ish version as I substituted ground turkey for beef and used lighter cream. Feel free to use heavy cream if you wish! Lastly, this makes a HUGE batch and it freezes beautifully - making this 2 meals in one. I hope you enjoy.

Kitchen Sink Beef and Vegetable Soup

The recipe for this delicious and filling soup is truly just a framework. It’s great to have a recipe like this at the end of the month to have a peek into the back of your fridge and see what needs to be used it. Go ahead and throw just about anything in this soup! It can’t hurt! Serve it with some crusty bread, slathered with butter and a nice glass of red wine.

Weeknight Baked Blackened Salmon

I try to work salmon into our family’s meal rotation, but it’s not universally loved by everyone, so I need to be strategic about how to ‘sell’ it to the kids. This dish is a total winner! It takes less than 20 minute to prepare. It’s has a sweet and smoky flavour that you will love and that that crispy panko on top gives it a tempura texture that the kids like. Start by steaming some rice to serve along side this. And your favourite steamed veg or a little simple side salad.

Chocolate Chip Energy Bites

These are so easy to make on a Sunday and keep in the fridge for quick, easy and healthy snacking! I use Wow Butter to make these school safe. My kids don’t know the difference!
