Peach Caprese Salad

Ingredients:

  • 2 ripe peaches, cored and chopped

  • 2 cups cherry tomatoes, halved

  • 1 1/2 cups basil, cut into ribbons or roughly chopped

  • 1 cup of boccacini mozzarella cheese or 1 8oz ball, cut into cubes

  • 2 tbsp balsamic glaze

  • 1 tbsp olive oil

  • 1 tbsp honey

  • salt and pepper to taste

Directions:

  1. Mix everything together in a shallow bowl or on a platter and serve!

 

Can I make this Peach Caprese Salad in advance?

Yes! I think this salad tastes even better when it has had time to sit. You can make this salad up to 2 hours in advance. Store it in an airtight container in the fridge and let it come to room temperature before serving.
