Crispy Chicken Thighs with a Cilantro & Lime Dressing

Garlic, ginger, cilantro and lime takes simple chicken thighs and turns them into a mouth-watering recipe thanks to all of those flavours and a little secret ingredient: cornstarch.

The chicken gets coated all over with a lovely mix of spices, then dusted with cornstarch and drizzled with olive oil. Then the air fryer does its magic and you are left with the most delectable and full of flavour dish that is surprisingly special for a mid-week meal.


Crispy Chicken Thighs with a Cilantro & Lime Dressing

Ingredients:

6 chicken thighs, skin and bone on

1 tsp cumin

1 tsp coriander

1 tsp onion powder

1 tsp garlic powder

1 tbsp cornstarch

Drizzle of olive oil


For the Cilantro & Lime Dressing:

1/4 - 1/3 cup cilantro, chopped

2 green onions, sliced

1 tsp garlic, minced

1 tsp ginger, grated

1 lime, juiced

¼ cup soy sauce

¼ cup olive oil

1 tbsp sesame oil


Directions:

  1. Combine the spices and generally season the chicken with the spice mixture.   Dust the chicken with the cornstarch and then drizzle with olive oil.   Make sure the chicken is well coated.

  2. Pop the chicken into the airfryer for 20 mins at 200F.    I use these airfryer liners to help with cleaning up.  And this is my air fryer.

  3. While the chicken is cooking, make the Cilantro and Lime Dressing by stirring together all the ingredients listed above.   

  4. When the chicken comes out of the airfryer, top it with the delicious dressing and enjoy!

Serve this with steamed rice or roasted potatoes and a light side salad!
