Weeknight Blackened Salmon

This baked blackened salmon is one of my all time favourites. It’s super simple to prepare and the results are absolutely delicious! The tang from the dijon mustard is subtle, the smoky seasoning blend pairs perfectly with the sweetness from the salmon and the crunch and freshness from the panko bread topping is 10/10!

I try to work salmon into our family’s meal rotation, but it’s not universally loved by everyone, so I need to be strategic about how to ‘sell’ it to the kids.

Here are a few reasons why this salmon recipe is a total winner:

  • This dish is so easy to prepare - it took about 5 minutes of hands-on work before I put it in the oven - then just 12 minutes to bake to perfection. Dinner in less than 20 minutes!! Huzzah!

  • The brown sugar seasoning gives the fish a wonderful sweetness that my kids actually enjoy.

  • The panko coating creates a sort of crust that provides a lovely crunch in contrast to the buttery fish texture. Think chicken finger vibes, but elevated!

This Baked Blackened Salmon is definitely a keeper.


Baked Blackened Salmon

Ingredients:

For the salmon:

  • 2 lemons, thinly sliced

  • 4 (6 oz) pieces Atlantic salmon

  • 4 Tablespoons Dijon mustard

For the brown sugar topping:

  • 3 Tablespoons brown sugar

  • 1 teaspoon salt

  • 3/4 teaspoon smoked paprika

  • 3/4 teaspoon garlic powder

For panko parsley topping:

  • 2 Tablespoons unsalted butter, melted

  • 1/2 cup chopped parsley

  • 1/4 cup panko breadcrumbs

    Directions:

  1. Preheat the oven to 425 degrees.

  2. Line a rimmed baking sheet with parchment paper. Lay 3 lemon slices in a single row for each piece of salmon.

  3. Place each piece of salmon on top of the lemon bed. Check for fish bones. Remove the fish bones with fish tweezers if needed.

  4. Spread or brush the top of the filets with dijon mustard.

  5. In a bowl, stir together the brown sugar topping ingredients.

  6. Sprinkle the brown sugar topping on top of the mustard salmon. Make sure to cover the salmon all over.

  7. In a small bowl, combine the panko parsley ingredients.

  8. Sprinkle on the panko topping on the salmon. It's okay if some falls off.

  9. Bake for 12-15 minutes, or until the salmon is no longer opaque in the middle.
