Copycat Erewhon Kale and White Bean Salad

Over on my end of the internet, I keep hearing about this Erewhon Kale and White Bean Salad that has totally piqued my interest. I have never had this said salad, nor have I ever been to Erewhon (a bougie specialty foods store in LA), but if I can make this trendy salad at home and enjoy the hype, you bet I will!

What drew me to this salad is that there are minimal ingredients and that is is a salad that is high in protein. I, like everyone these days, is trying to pack in as much protein as possible at every meal.

Here is what you need to make this swoon-worthy salad:

Kale - I am using curly kale. I love how the dressing and the seeds get caught in all the kinky bits, so that every mouthful is delicious and full of texture.

Avocado - creamy and an excellent source of healthy fats.

Seeds - Hemp, Pumpkin and sunflower seeds. The pumpkin and sunflower seeds are toasted and give this salad the most delicious crunch.

White Beans - white beans are an incredible source of fat, fibre and protein. They are a must in this salad.


Kale and White Bean Salad

Ingredients:

For the Salad:

  • 8 cups chopped kale, stems removed

  • 1/4 pumpkin seeds

  • 1/4 cup sunflower seeds

  • 1 can cooked white beans, drained and rinsed

  • 1 avocado, cubed

  • sprinkle of hemp hearts/seeds

For the Vinaigrette:

  • zest and juice from 1 lemon

  • 1 tsp disjoin mustard

  • 1 tbsp maple syrup

  • 1/3 cup olive oil

  • 1/2 tsp salt

  • pinch of black pepper

    Directions:

  1. Add your dressing ingredients into a mason jar and shake.

  2. Dry toast pumpkin and sunflower seeds on a skillet over medium/low heat then add a drop of oil and pinch of salt

  3. Add your washed, dried and chopped kale to a large bowl

  4. KEY STEP: massage your kale with some of the dressing!!

  5. Add white beans, cubed avocado, and seeds

  6. Top with hemp seeds. Enjoy!
